Kelp noodles combined with spiralized zucchini noodles tossed with a spicy pad thai sauce

For the sauce
  1. ½ cup coconut milk
  2. ¼ cup raw almond butter (I like Artisana or Maranatha brands)
  3. ½ t. minced jalapeno
  4. ½ T. freshly grated ginger
  5. 1 T. coconut aminos
  6. ½ T. miso
  7. ½ t. crushed garlic
  8. 1 T. lime juice
  9. 1-2 Medjool dates pitted and chopped
  10. tiny pinch of cayenne
  1. Zucchini noodles spiralized
  2. Kelp noodles
  3. Fresh chopped cilantro
  4. Shredded carrots
  5. Red bell pepper strips
  6. Raw cashews
  1. Place all ingredients in high-speed blender and blend on high until all the ingredients become creamy and smooth. Taste and adjust flavors if necessary.
  1. Sprinkle cut kelp noodles, cilantro, carrots, peppers and cashews over zucchini noodles and toss with pad thai sauce.
